Description

Bannu Nalli Pulao is a legendary, traditional mixed rice dish originating from the Bannu district in Khyber Pakhtunkhwa, Pakistan. Unlike light, fluffy white pulaos, this regional specialty is famous for its dark brown color, intensely rich flavour, and moist, juicy texture. The defining characteristic of the dish is cooking the meat (traditionally beef, though mutton is also popular) with bones and marrow (nalli), which melts into the stock (yakhni) to give the rice a distinct, sticky richness.
